This is how I made that soup:
Chop up and fry until browning and softened:
- 1 big onion or 2 medium.
- 3 or 4 carrots
- 2 or 3 stalks of celery
Add any spices you want like salt, pepper, celery salt, thyme, and cumin.
Heat up:
- 3 quarts of chicken broth (I used organic chicken broth that had 25% or something less sodium than the other organic chicken broth. I'm kind of an organic freak sometimes).
- Add vegetables and boil until completely softened
While the vegetables are boiling, make the noodles! You will need:
- 1 cup of flour
- 1 egg
- A pinch of salt
Mix all together (I had to add water to get everything moist) and roll out on flour. Cut into very thin strips. I put the strips on paper towel on a cookie sheet. Let dry. To quicken this step I heated the oven to the lowest possible temperature and baked the noodles until they were mostly dry.
Tear meat off a whole, cooked chicken. When the veggies are cooked, add the chicken, add more spices, and add the noodles. The noodles need to boil for 15 mins.
